Egg Salad (PSMF)

About the Recipe

This is a high protein, lower fat version for your PSMF days

Ingredients


❤️3 eggs and 6 tbsp egg whites (eggs should be pasture raised organic)

❤️2 tbsp Mayonnaise

❤️1 tbsp dijon mustard

❤️1 tsp lemon juice

❤️1 tsp chives

❤️Salt & Pepper

❤️1/4 tsp Ceyanne pepper



Preparation

❤️Cook your egg whites in a skillet until done (like scrambled eggs), put in the fridge to cool

❤️Place your eggs in a saucepan cover with cold water

❤️Bring to a boil and cook for 10-12 minutes

❤️Remove from the heat, rince with cold water

❤️I like to add them to an ice water bath (just have ice water in a bowl and add eggs)

❤️Let the eggs completly cool - you can then save in the frige or make the egg salad


Coach❤️Theah Tip: boil extra for hard boiled egg snack or add to your salad for later in the week

Peel the eggs🥚

Add the eggs to the scrambled egg whites bowl, add all ingredients and mix together

Add salt & Pepper

Add to an Egglife Wrap or your favorite low carb wrap

Add lettuce, tomatoes and pickles (optional)




I enjoy mine on lettuse with bacon bits❤️
